Pasta: an overview

Pasta is a type of food typically made from an unleavened dough of wheat flour mixed with water or eggs, and formed into sheets or other shapes, then cooked by boiling or baking. Rice flour, or legumes such as beans or lentils, are sometimes used in place of wheat flour to yield a different taste and texture, or as a gluten-free alternative. Pasta is a staple food of Italian cuisine.
Pastas are divided into two broad categories: dried and fresh. Most dried pasta is produced commercially via an extrusion process, although it can be produced at home. Fresh pasta is traditionally produced by hand, sometimes with the aid of simple machines. Fresh pastas available in grocery stores are produced commercially by large-scale machines.
Production and market
In 2015-2016 the largest producers of dried pasta were Italy, with the amount of 3.2 million tonnes, the United States with 2 million tonnes, Turkey with 1.3 million tons, Brazil and Russia with 1.2 million tonnes and 1 million tons, respectively.
In 2018 Italy was the world’s largest exporter of pasta, with $2.9 billion sold, followed by China with $0.9 billion.
While Italy is the largest producer of Pasta, much of the wheat used comes from the United States.
Furthermore, the largest per capita consumers of pasta in 2015 were Italy, then we have Tunisia, Venezuela and Greece. Although, the United States was the largest consumer of pasta with 2.7 million tons.
