Couscous is a staple food of the culture of Maghreb countries, such as Tunisia, Algeria, and Morocco.
This dish is made from durum wheat semolina that has not been transformed into flour, which is mixed with water and converted into tiny grains. It can be prepared with spices, sauces, and vegetables and then served in a tagine with lamb meats.
There are different opinions about the origin of couscous, but Historians agree that the Berbers living in North Africa in the third century BC are to thank for its existance. This dish represents a complete meal that has been gradually conquering the world, becoming also an intangible cultural heritage of UNESCO since December 2020.
Today, couscous is mostly produced industrially. In 2020, it represented the 3597th most traded product in the world, with a total trade of $191M, growing by 16.6% compared to 2019. Its trade represents 0.0011% of total world trade.
In 2020 the top exporters of couscous were Italy ($58.9M), Morocco ($40.5M), France ($36.6M), Israel ($5.17M), and Canada ($4.96M), while the top importers were France ($44.9M), Germany ($13.8M), United States ($13.4M), United Kingdom ($13.3M), and Belgium ($12.4M).
